Just in time for Independence Day-one of my favorite party foods and this is a healthier version than the traditional fried but has all of the flavor.
Buffalo Chicken Wings
4 pounds of chicken wings, cut the tip off (save for stock) and cut the wing into two sections then toss in 2 tsp Kosher Salt
Bring a large pot of water to a boil
Place the wings in a steamer basket or collander and reduce heat to medium. Steam for 10 minutes- this will begin to cook the wings and more importantly melt off most of the fat
After 10 minutes pull out, pat dry and refrigerate for one hour
Set your oven to 425 deg and place the wings on a broiler pan or baking rack suspended over a cookie sheet
After about 12 minutes the wings will be crispy and fully cooked with no smoke in your house and little fuss
Sauce- there are a few options here, you can simply grab a bottle of Big Boss BBQ Sauce, Big Boss Buffalo Sauce (Wild or Mild), Big Boss Jamaican Jerk Sauce, Big Boss Teriyaki Sauce or Big Boss Rocket Sauce which are both convenient and tasty or you can try this easy Buffalo Sauce recipe
Homemade Buffalo Sauce Recipe-
2 Tbsp Unsalted Butter
1/4 cup Lousiana Hot Sauce
2 cloves fresh garlic minced
2 Tbsp Ketchup (or catsup if you prefer)
If you would like a little extra kick add 1/4 tsp cayenne pepper
Melt the butter, add other ingredients and mix well
Place cooked wings into a large bowl and mix in sauce, toss to coat
This works great with a side of celery and bleu cheese dressing or ranch
