Lemon Chicken with Thyme
Ingredients:
3 T. flour
½ t. salt
¼ t. pepper
4 skinless, boneless chicken breast halves
2 T. olive oil
1 medium onion, chopped
1 T. butter or margarine
1 c. chicken stock
1 ½ T. lemon juice
½ t. thyme
2 t. dried parsley
Directions:
In a plastic bag, combine flour, salt & pepper. Add chicken & shake to coat. Remove chicken & reserve excess flour mixture.
Pour 1 T. oil in a large skillet & warm over medium heat. Add the chicken & brown on 1st side, about 5 minutes. Add remaining oil, turn chicken & brown on second side, about 5 minutes longer. Transfer chicken to a plate & set aside.
Add butter (margarine) to the skillet. When melted, add onion & sauté until softened, 5-7 minutes. Stir in reserved flour & cook, stirring, until flour is completely incorporated, about 1 minute. Add broth, lemon juice & thyme. Bring mixture to a boil, stirring constantly.
Return chicken to skillet. Reduce heat to medium low, cover & cook until chicken is tender & cooked throughout, about 5 minutes.
Sprinkle with parsley & serve.
